I'm not arsed to be honest because none of them are on the Wii, but both have there good and bad points and for WWE fans, UFC has Brock Lesnar and EA MMA has Bobby Lashley.
So which do you prefer?

Graphically, Undisputed looks miles ahead, which is odd when up against an EA game. The MMA one looks a bit "cartoony".
Also, the UFC 2009 game was fantastic, really original and I have a feeling MMA is gonna be Fight Night with kicks.
Plus, the fact the MMA game only has smaller promotions is a disadvantage (Bobby Lashley ) too.
Although if they implement legends and the old school Pride rules it could be interesting. How many times on UFC do you just want to kick someone in the face when their down

I kinda agree with you although the EA sports one does have it's fair share of legends including Randy Couture (due to UFC not owning his likeness), Ken Shamrock, Dan Henderson, Tim Sylvia, etc... not to mention the greatest fighter never to go to UFC, Fedor Emelianenko with his 32-1-1 MMA record, so alot of MMA fans will be glad to play as him.
I don't mind the smaller promotions thing either (as I like the mix and match of promotions aspect) and the fact you can have bouts in a cage or a ring, plus Strikeforce is the TNA of the MMA world and has gained alot of popularity as of late.
That being said I want EA to fail as they refused to make a UFC game because "MMA is not a sport" and they changed there minds when the UFC 2009 game did well.

UFC also has some more legends like Severn and Royce Gracie

White warned the fighters who intend to be included in the upcoming EA Sports MMA game release, claiming that "If you do business with EA, you won't be in the UFC". Former UFC heavyweight champions Tim Sylvia and Andrei Arlovski, as well as still under contract Frank Trigg (who has now been released from his UFC Contract following his loss to Matt Serra) and Vladimir Matyushenko confirmed their presence in the EA Sports MMA video game. Fan favorite Randy Couture was under contract with UFC before agreeing to be a part of EA Sports MMA, but is able to take part in the game due to never signing over his likeness to the UFC for use in video games

Kimbo was on Ultimate Fighter 10 and lost Preliminary Round of the tournament to the eventual winner Roy Nelson.

Kimbo has very little about him really, all the top heavyweights would slaughter him but he's popular and sells which is why he's there really.
I'd love him to fight Cro Crop later though, be a right scrap.
